Chablis 2018 - Jean-Paul and Benoît Droin

Today, Benoît Droin is at the helm of this 26-hectare estate.

The domaine covers the Petit Chablis and Chablis appellations, 9 parcels of Premiers Crus and 5 parcels of Grands Crus.

For this Chablis, the 9 hectares of Chardonnay are cultivated using integrated farming methods. After 8 to 10 months' ageing in vats, the Chablis is lightly filtered, just enough to retain the necessary Chablis aromas and structure. This is a good introduction to Chablis, allowing you to capture the minerality of the vineyard. In its youth, the wine will be fresh, with a round, mineral mid-palate and a fresher lemon finish.

Perfect with raw fish or as an aperitif.

Saumur Blanc 2019 - Domaine Guiberteau

Present in the region since 1934, the Guiberteau family is one of the oldest houses in the area.

Romain Guiberteau has been at the head of the vineyard since 1996, but first trained with the legendary Foucault brothers in Saumur-Champigny. In 2003, the 17 hectares were converted to organic farming. The estate is one of the appellation's must-haves, offering straightforward, expressive wines. A 100% chenin to discover, rich and complex. A pure marvel!

Les Grands Carmes Blanc 2014 - Château Simone

Once again, we bring you an emblematic figure from the region. This time, it's Château Simone, which has belonged to the Rougnier family since 1830, and which has lived through a great deal of history with them. Today, the seventh generation is at the head of the estate, but it is Jean Rougnier, 4ème generation to bring his vision and rigor to the estate. He even succeeded in obtaining the AOC Château Simone in 1946, before having a new appellation validated in 1948, the AOC Palette.

Les Grands Carmes is a blend of Clairette, Ugny Blanc and Viognier, all aged in small oak barrels and on lees to give the wines texture.

Drink within 4-6 years, with a lovely floral, stone-fruit bouquet. Enjoy with a seafood platter or white fish.

Oro 2004 - Domaine Peyre Rose

Marlène Soria of the Domaine de Peyre Rose, world-famous for her great red wines for ageing, needs no introduction. Today, we're going to tell you about her white wines, which are much more confidential and difficult to find, on the one hand because she only produces 2700 bottles, but also because her wines are aged for more than 10 years in foudre or in vats! Yes, 10 years!

Cuvée Oro is a blend of 60% Vermentino (Rolle), 25% Roussanne, 5% Viognier and small quantities of other grape varieties such as white Ugny or Terret-Bourret.

What does it taste like on the palate? A dry white, of course, but with a rich mouthfeel. Notes of dried fruit and ripe fruit, with a citrus finish and a slight oxidative note.

A very complex white, to be enjoyed with scallops or to accompany an old pressed cooked cheese.
